Science on the Rocks: Spooky Spirits Served With a Side of STEM

Last month’s Science on the Rocks: Spooky Spirits brought a full house into North Dakota’s Gateway to Science for an evening where chemistry met craft cocktails. In partnership with Oscar’s, guests explored molecular gastronomy up close—complete with liquid nitrogen, dry ice, aromatic bubbles, and a lot of laughter.

A Hands-On Look at the Science Behind Great Drinks

Oscar’s team led participants through the “why” behind what makes a cocktail work. Guests learned:

  • Shaken vs. stirred — how agitation changes texture, dilution, and flavor.
  • Types of ice and why size and clarity matter.
  • Flavor chemistry — including why certain alcohol combinations blend better than others.
  • Bitters and syrups — what they contribute and how to craft them intentionally.

The room lit up as Oscar’s demonstrated techniques that elevate drinks, including:

  • Creating tall bubble clouds that burst with aroma.
  • Using dry ice to instantly chill a beverage and create rolling fog.
  • Smoking an Old Fashioned to add depth and warm flavor notes.

Guests Became the Bartenders

The night wrapped with everyone stepping behind a mini-bar setup. With shakers, spoons, muddlers, and a wide range of spirits, syrups, bitters, and tonics, guests crafted their own signature drinks.

The best soundtrack of the night? The laughter as people learned just how tricky (and fun) it can be to shake a cocktail and open the tin without wearing it.
